Chabuton Singapore Exclusive - The Kurobuta

With the many ramen choices we have in Singapore, sometimes it can be quite challenging when it comes to deciding which one to eat.

However, from now till 31st March 2015, , there is ONLY ONE RAMEN you should be eating!

The first ever ramen Michelin star Chef Yasuji Morizumi from Chabuton Singapore has created a new exclusive ramen just for the Singapore audience!

Premium Tonkotsu Ramen :-- The Kurobuta ($18.90)
The thick and creamy broth of the ramen dish is a luscious blend of tonkotsu and chicken
collagen. Not only is it great tasting, it is also highly nutritional, and may I add

great for the skin too :D The broth is flavorful and quite agreeing with my
taste buds but a foodie friend exclaimed it was salty.
Generally japanese ramen may taste a slight salty to some :)

How can anyone say No to this fantastic piece of pork that is
often compared to the Kobe Beef ?
The marbled meat comes with small, fine streaks of fat that make each slice richly sweet, tender and succulent. Accompanying ingredients include bamboo shoot, Japanese leek and soft-boiled egg.
You will want more after tasting it ~

We were also treated to their
Hitokuchi Gyoza ($5.00 8 pcs)

 Also had the
Ika Karaage (Fried Squid $5)

Both items make great snacks for sharing :)

The ramen is indeed oishi !!
I wish there can be more than one slice of that prized pork ...  :P

Singaporeans are really in for a treat! Chabuton has recently opened their third outlet at The Star Vista! This is just five months since the opening of their first outlet in Singapore!! Congratulations !!

Do go grab a bowl or two of The Kurobuta before they run out !! Till 31st March 2015 only!!

The one who ate Ramen Champion at Illuma

Ramen Champion at Illuma : 6 different ramen stalls to try out!

ordering system is like that of marche.

Diners will be given this card at the entrance.
it works just like marche.

As we were quite hungry plus we had to wait in line for about
15 mins, I kinda just ordered from the stall with one of the shortest que.

Ikkousha

Ikkosha ramen. Nice thick slices of char siew..
broth was nice at first..
but there is a slight change in consistency and taste as time passes.

left some for Alex.
the noodles are the thin type

Alex chose a stall with a rather long que! :P

Iroha

Their No. 1 Ramen
Toyama Black Shoyu Ramen .
noodles is thicker than the one i tried.
soup is like 'lor mee ' taste.. braised. :P

The six different chefs and their noodles
we tried 2...4 more to go!

Eileen eats Ippudo Ramen @ Mandarin Gallery

Ippudo Mandarin Gallery- 2nd overseas outlet outside of Japan with the first being in NY.

After doing my 'research' online, ie by reading various reviews on blogs as well as food websites... I decided to pay Ippudo a visit on a Thursday late afternoon.

This would be the first time I venture to the upper floors of this high end shopping enclave. It houses a mixture of life style shops to high end fashion and of course, restaurants & cafes. Jones the Grocer is there too and oh, the over blogged Wild honey which serves all day 'global' breakfast is a stone's throw from Jones . I was juggling both Ippudo and Wild honey actually, and Ippudo emerged as the winner since I don't really fancy 'breakfast at 4.30pm

No queues or what so ever ....
you must know what kind of timing to avoid :)

There are a few types of soup base you can choose from . There is the Shiromaru Classic which is tonkotsu soup ( pork ) , the Akamaru Modern which is the same pork broth but enhanced with their special miso paste ( see photo below--the red/orange paste in the middle ). There is also the Shoyu ( soy sauce ) and Ippudo Karakamenwhich is served with a spicy paste. After reading so many reviews :P it was Akamaru for me! It was served in a red bowl

You can choose to add on the egg, and pork belly ( two slices ) to your ramen ( $17 before taxes ) . The server will ask how you would prefer your noodles to be done- hard, medium or soft.. I chose medium :P I hate noodles that are too hard and soggy.. so medium seems to be the right choice and yes it was :) I finished the whole bowl :D

what's inside?

Black fungus , two slices of pork belly ( yums!) lots and lots of spring onions ( if u want to sound abit atas- scallion) speical blend of miso ( has minced meat)
pieces of cabbage

i was bowled over..

closer look at the broth
thick and flavorful
with garlic oil.

i love the soup.. it has crunchy onions in them too
i had a great time picking them out..
has three of my fav!
Spring onions, onions and garlic

I was disappointed with the egg
i had better ones
this isn't perfect...
some parts were overcooked

i would have preferred that they serve
the egg separately in a dish
and also to half the egg for us..

Decor wise it was pleasing. Mirrors made the place seem bigger
and one of the wall was don with manga drawings while another was lined with bowls

one of the feature decor -
a big "lamp' chandelier

As I was alone, it seemed impossible to be ordering any other side dishes or desserts

My late lunch/ early dinner consisted of the raman and a cool glass of ice lemon tea.
i was set back by $23 after taxes

Service was prompt and smiles were aplently
Well it may be different if it it during the peak meal time periods
During meal times :
Prepare to be seated in the communal dinning area and prepare to be overheard

A taste of Hokkaido-- Aoba Hokkaido Ramen

Am immersing myself in Japanese food lately. This might come slightly later than most others, I finally tried the Aoba Hokkaido Ramen located at Ion Orchard.
The que was impossible when they first open months ago. We were there about 8.30pm and there was no one in the que. ( It was full house though) . As we were in the que waiting for our table, Chris incidentally commented that the menu layout ( something in that line ) resembles Ajisen ...and after diggin of info on the net, I found out that yeah, Ajisen brought in this ramen chain.

I like the decor on the walls
and the cute usage of crates for lighting

Not being a big fan of miso, I decided to go for the Shoyu Tontoro Ramen. It comes served with an egg, a piece of nori , and ( IMO) generous serving of tontoro * belly meat* ( i love meat with a bit of fats ) . The noodles have a springy texture . Soup was tasty and not too salty though we did get thirsty on our way home.

*mark & chrissy both had the shoyu base noodles too..
albeit different kinds of meat*

sides to share
Mentai Tofu
* in love with mentai*

bacon asparagus

Happy people

A taste of Hokkaido- Tampopo

Treated myself to a tasty rich bowl of seafood base ramen at Tampopo last week. They were having the Hokkaido ramen specials ( ended 22 Nov. )

Noodles were served separately from the soup. Just add the amount you like into the soup. I had some difficulties with the noodles as they were kinda 'dry' and was a chore trying to get an appropriate amount into the soup.

There were dried shrimps, bamboo shoots
and seaweed. Soup is a tad 'salty'

something's missing

can u figure out what food item is missing?

How can they forget the egg?
so ..here it is :P
( so cheapo.. one egg cost like 10-20cents..
this place only serves 1/2 an egg! )

good read

"As a young girl, Ginko Ogino seems set for a conventional life, cushioned by the male-dominated society of nineteenth-century Japan. But when she contracts gonorrhoea from her husband - an illness then thought to be incurable - she is divorced and disowned by her own family. Unable to bear the humiliation of being treated by a male doctor, she resolves to become a doctor herself. As more and more obstacles are placed before her, will she give in to social pressure or continue to fight against her world and her times?A huge bestseller in Japan, where it sold over three million copies, "Beyond the Blossoming Fields" is the real-life story of Japan's first female physician and a timeless parable on the power of love and idealism."
